Just like with every game with a huge list of DLCs, some of the DLC content Magicka has is more worthwhile than others. Some just add more items and PvP/challenge arenas. Others actually add more gameplay and storylines in addition to bringing new items and robes to the party, like the Vietnam DLC, as well The Stars Are Left, and The Other Side of the Coin and Dungeons & Daemons campaigns. These will each give you a couple more hours of fun after you finish the main story and are a lot more difficult than the original campaign. If you aren't that good at this game, don't buy those. The rest of the DLCs are more or less unnecessary for enjoying what the game has to offer; they're only cosmetic or add just a few new weapons, items or costumes. Buy the whole collection only if you're a completionist or you have a lot of money to spend and you don't care what it goes into.
