God of War III is the final game in the main God of War trilogy (although there are two side stories and a prequel game). If you have not played God of War before missing out on the first two can leave you confused about the story but I never really consider that the main motivation of playing these games and I thought that God of War 3 probably had the weakest story of the trilogy. What God of War 3 does do well is creating a sense of scale, giving you great boss fights, and it improves the combat of the series by allowing you to quickly switch between different weapons to create impressive and useful combos (a big step up from the first game where I never really had reason to do anything but the same combo with the main weapon over and over). You also get access to varied and enjoyable to use weapons and items as you play through the game. This Remastered version updates the original game with better resolution, a higher frame rate, and better lighting effects but no new content or feature changes, if you are still able to play your PS3 copy with probably isn't worth it but if you have a choice this is the best way to experience the game for the first time.
